Spicy Stuffed Pumpkin Cheesecakesby Jenny Johnson
If you’re looking for a recipe that the kids and adults will enjoy, then look no further.
These fun and festive mini-cheesecakes with an Oreo crust will surprise and kiddos and the spicy, orange pop of flavor will woo the adults.
Ingredients (makes 12)
- 8 oz cream cheese (softened)
- ½ cup sugar
- ½ cup pumpkin puree
- 1 egg
- ½ tsp vanilla extract
- ½ tsp Chinese-5-Spice
- 1/8 tsp nutmeg
- Zest of ½ orange
- Pinch of salt
- 2 tbsp flour
- 12 Oreo cookies (Halloween version preferred)
Preheat oven to 325 degrees.
Line muffin tin with 12 liners. Place 1 Oreo cookie in the bottom of each muffin liner.
In large mixing bowl, mix cream cheese and sugar until smooth. Add the remaining ingredients in any order and continue to mix until smooth.
Pour batter evenly over each muffin tin. Bake for 20-25 minutes.
Cool on rack and then refrigerate.
