This tasty salad brings the delicious flavors of summer to your table all year round.
The sweet tomatoes, zesty fennel, salty feta cheese, and tangy balsamic vinegar combine for a fabulous alternative to a plain green salad.
Tomato Salad with Fennel and Feta Cheese Recipe
- 1 pint red cherry tomatoes
- 1 pint yellow cherry tomatoes
- 1 bulb fennel, sliced
- 1/4 cup olive oil
- 1/8 cup balsamic vinegar
- Dash of kosher salt
- 1 tbsp chopped shallots
- 8 oz chopped feta cheese
- 1/4 cup chopped parsley
In a small jar with a lid, add olive oil, balsamic vinegar, kosher salt, and shallots and shake to combine.
In a large bowl, add both kinds of tomatoes and chopped fennel. Pour dressing over tomato mixture and stir to evenly distribute the dressing.
Transfer the tomato mixture to a serving bowl.
Sprinkle the feta cheese and parsley over the tomato mixture and serve!
