Mini Sweet Potato Pies
Sweet potatoes with marshmallows is a very traditional (and delicious) side dish for Thanksgiving.
This recipe for mini sweet potato pies is a cute way to update the old classic!
Mini Sweet Potato Pies Recipe
- 3 large sweet potatoes
- 1 C low fat milk
- 1 t cinnamon
- 1/2 t nutmeg
- 3 egg whites
- 2 eggs
- 1/4 C softened butter
- 1 C sugar
- 1 t vanilla extract
- mini marshmallows
Poke the sweet potatoes with a fork, wrap them in aluminum foil, and bake at 400 degrees for 1 hour. When the potatoes are soft, take them out of the oven and peel off the skin. Place the baked, peeled potatoes in a large bowl. Add milk, cinnamon, nutmeg, eggs, butter, sugar, and vanilla and mix for 2 minutes until smooth.
Pour mixture into muffin tins with paper liners, half-way to the top. Bake at 350 degrees for 20 minutes. Remove from the oven and top each pie with mini marshmallows.
