Carrot Side Dish Recipe [Vegan]

This is a rich, decadent side dish perfect for a special holiday celebration.

Sweet and full of flavor, I hope you enjoy this recipe as much as my family does!

Ingredients

  • 2 pounds carrots, peeled and chopped on the diagonal into 1 inch pieces
  • 4 tablespoons Earth Balance (vegan butter alternative)
  • 4 large shallots sliced in rings
  • ¼ cup vegan sugar
  • 2 tablespoons vegan Dijon mustard
  • 1 teaspoon coarse salt

Directions

Steam the carrots for 10 – 15 minutes until tender.  Drain carrots and put aside.

In a skillet over medium-high heat melt Earth Balance. Add shallots, cooking until lightly browned about 2 – 3 minutes.  Add sugar, mustard and salt stirring until combined.

Add carrots and cook until warm throughout.
