It’s customary to eat sweet things, like apples and honey, on Rosh Hashanah to symbolize a sweet new year. Whether you’re hosting or attending a holiday feast, a classic apple cake is sure to be a hit amongst your family and friends!

Here is a simple recipe you can make to celebrate the New Year!

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1 cup oil
  • 4 eggs
  • 6 peeled and thinly sliced apples
  • 3 tbs. chopped walnuts
  • 2 tsp. baking powder
  • 2 tsp. vanilla extract
  • 2 tsp. cinnamon.

Directions

Preheat oven to 350 degrees.

In a large bowl, mix eggs, oil, flour, baking powder (add to dry ingredient first), vanilla extract and 1 1/2 cups of sugar. In a separate bowl, mix sliced apples with the rest of the sugar, cinnamon and chopped walnuts.

Into a greased pan, alternate pouring one layer of batter, one layer of apples, one layer of batter again, then end with apples on top. You can even add some dried cranberries on top for some extra color and flavor.

Bake for 1 1/2 hours. Serves 10-12.

Enjoy!
