Healthy Halloween Chips

“Everything changed the day she figured out that there was exactly enough time for the important things in her life.”  – Brian Andreas

Halloween is right around the corner…Have you been to your local pumpkin patch yet? What about Halloween crafts? Got any good ideas?

One of my favorite things to do this time of year is peruse the aisles of Michael’s. I’m sure you’re probably shocked! While I was there falling in love with the Halloween villages, and looking at the festive decorating and baking ideas, I came across a set of three cookie cutters: a ghost, scary cat, and pumpkin.

I was so tempted to make a delicious Halloween dessert, but I know very soon our house will be exploding with candy and sweet treats – so I decided to channel my creative juices down a slightly healthier road and made a batch of baked Halloween chips.

These make a great snack served with your favorite healthy dips like guacamole or hummus. You could even go all out embracing the Halloween spirit by adding some orange coloring to the hummus.

Healthy Halloween Chips

Ingredients:

  • Tortillas
  • Cooking Spray

Directions:

Pre-heat oven to 350F

Spray a baking sheet with cooking spray to prevent sticking.

You can use flour tortillas, or opt for the multi-grain or whole wheat high-fiber, low-carb tortillas as we did.

Using Halloween shaped cookie cutters, cut the tortillas into your favorite shapes.

Press the cookie cutter down firmly on the tortilla and keep pressure applied while carefully pulling away the rest of the tortilla wrap.

Place onto greased baking sheet, and bake for approximately 5 minutes until the edges are golden brown.

In our home you will frequently smell burned bread or pitas, so I recommend you set the timer and/or watch carefully.

(Yum!)

Wishing you a spooktacular fall day, my friends!

With love & gratitude,
Wendy Irene
