Sugar Mommas’ PTA Chocolate Banana Bread

As the children shuffle back to school, many parents attend PTA meetings, coffees, and Back to School Night. If you volunteered for the food committee, here is an easy Banana Bread recipe with a chocolate chip zinger that will surely get you some oooh’s and aaah’s!

Preheat oven to 325ºF.  Butter and flour (or use non-stick cooking spray with flour) one 9” x 5” loaf pan. 

Ingredients:

1¾ c. flour
1½ c. granulated sugar
1 tsp. baking soda
½ tsp. salt
½ c. vegetable oil
2 eggs
¼ c. + 1 Tbsp. buttermilk
2 ripe bananas
1 tsp. vanilla
1 c. semi-sweet chocolate chips

   
In a large bowl, combine flour, sugar, baking soda and salt.  Stir until well blended.  Add oil and eggs and mix again until dry ingredients are incorporated.  Cut in small pieces of banana and add buttermilk.  Use a fork to mash in the bananas and blend well. Add vanilla and chocolate chips.*  Give the batter a final mix.  [Carpool Crunch:  If you’re in a rush, throw everything (but chips) into a bowl of an electric mixer and mix on LOW until a batter is formed. Then toss in the chips. – shhhh!]  Spread the batter into prepared baking pan.  Bake bread one hour, ten minutes (cooking times may vary depending on your oven, so check often!) or until a fork or skewer inserted into center comes out clean. Cool on a wire rack.

*Sass it Up: Add ½ cup chopped walnuts.  BEWARE of nut allergies and be advised if your school has a nut policy!
Also, sift ½ c. of powdered (Confectioner’s) sugar on top of your loaf if you desire.
