Brooke's Famous Fried Rice

Great anytime. Quick easy and healthy. It’s a complete meal that kids and moms love! I love this recipe to take advantage of any left over chicken in your refrigerator, you can also add corn, asparagus, carrots, peas, etc.

If you are starting from scratch....

Preheat oven to 450, bake 5 skinless chicken breasts for 20 minutes. Chop in small pieces.

Prepare the rice

Prepare 4-6 cups of rice, set aside. Special tip - the recipe comes out better if you prepare the rice ahead of time so it's cold.

Saute and Scramble

In a large skillet, sauté one chopped onion, set aside. Scramble 4 eggs, chop well, set aside

Combine and Consume!

Combine all ingredients, add butter, garlic salt and soy sauce to taste. Serve warm, enjoy!
