Cosmic Cracker Candy

They call this “Cracker” candy but when you taste it you’ll wonder if they shouldn’t maybe remove the “er.” This is some tasty stuff " and it’s pretty addictive! We’re always on the lookout for fun and different kinds of sweet treats so we were thrilled when we came across this one. It’s relatively quick and painless though you do have to wait for it to chill. When you’ve tried it once, the next time you make it could be the longest wait of your life…

Graham Crackers

(approx. 15 graham crackers, or enough to fill the bottom of pan) 1 c. unsalted butter 1 c. light brown sugar 12 oz. chocolate chips 1/8 tsp. vanilla (optional)

Directions

Preheat oven to 400ºF. Line a 9 x 13 inch baking pan with aluminum foil and spray with non-stick cooking spray. Spread graham crackers evenly on top of aluminum foil. On medium heat, slowly combine butter and brown sugar until it boils. Stir constantly for 3-4 minutes until mixture becomes frothy and sugar is completely dissolved. Spread sugar mixture evenly over crackers with a spatula, knife, cake spreader, or back of spoon " whatever is within reach. Bake at 400°F for 5 minutes.

While toffee sugar mixture is in the oven, melt 12 oz of chocolate chips in a microwave for 2-3 minutes. Take chocolate out after every minute to stir. Be careful not to burn. Spread melted chocolate over crackers. Cool. Refrigerate for a minimum of 3 hours or overnight.* OR if you don’t have a microwave…

After removing crackers from oven, sprinkle chocolate chips over sugar and place in oven for 3 more minutes. Spread melted chocolate over crackers. Cool. Refrigerate as above. Break into small pieces & enjoy!

To store:

Refrigerate in air tight container

Variations:

Use Saltines or Matzo in lieu of graham crackers. For chocolate, use milk, semi-sweet, or Reese’s peanut butter chips. If using two different types of chips, use a knife to swirl the chocolate into a marble effect.

After the chocolate has melted…go to town! Items to sprinkle for cosmic effect:

Heath Bar crumbles;

wait until chocolate has cooled a bit ¼ cup of chopped nuts, press into chocolate Colored Sprinkles to co-ordinate w/ your holiday Crushed candy canes Rice Krispies Granola Mini marshmallows Skip the chocolate all together and press pecans or almonds directly into the “toffee”
