Delicious Jell-O Watermelon Dessert

Now that watermelons are on sale, it's a great time to buy them up. But how can you make a watermelon even more fun to eat?
Make a Jell-O Watermelon!
It's a really fun activity for the kids, and at the end, you can eat it!

To start this project you need a small watermelon. Jessie uses one that is about 8 inches. The best size is 8 to 10 inches because it best fits the Jell-O.
Take a sharp knife and cut the watermelon in half. Go around the rind with the knife to mark where watermelon needs to be removed.
Scoop around the watermelon to make room for the Jell-O. You can save the watermelon and use it for anything: smoothies or just for a snack. Scrape along the sides so it’s kind of smooth and pour out all the juices.
Add 3 cups of boiling water to the Jell-O powder. Stir until it is dissolved. Add 2 cups of cold water. Continue stirring to lower the temperature. When the texture feels a little thicker, transfer to a pourable measuring cup.
Jessie uses the Jell-O Jiggler recipe because it needs to be extra firm. Do not follow the instructions on the box because that makes your Jell-O too soft, and it won't stick to the watermelon or hold it's shape.
Sit a watermelon half in a bowl to keep it upright. Fill the watermelon shell with Jell-O all the way up to the top.
Place the bowls on a cookie sheet and refrigerate overnight.
To cut, use a sharp knife. Don't use a serrated knife because it will leave marks. Cut the watermelon in half using gentle sawing motions to get it in, and then gently push straight down. Then, cut the watermelon into wedge pieces. Serve up on a platter.
