We love this grilled vegetarian panini made from mozzarella cheese, roasted red peppers and olive spread.
It's a hot and tasty treat that makes the perfect mid-day meal.
Ingredients (makes 4 sandwiches)
Directions
Place mozzarella and roasted pepper on bottom English muffin halves. Spread tapenade on remaining muffin halves.
Place on top of roasted peppers. Spray large skillet or grill pan with no-stick spray. Heat over medium heat.
Wrap brick with foil. Place sandwiches on griddle pan or skillet; top with another skillet and foil wrapped brick.
Grill weighted sandwiches for 5 or 6 minutes turning once or until cheese is melted. (Or, place sandwich on a covered indoor or panini grill; close lid, grill 3 to 4 minutes or until cheese is melted).
