What We're Eating: Mexican Lasagna

Tired of regular old lasagna? Sure, the layers of pasta, cheese, and sauce are usually delicious, but sometimes this traditional dish gets a little old. Luckily, we found a mouth watering recipe that's so quick and simple, it's sure to make your taste buds throw a fiesta.

Step 1: You're half way there...

Boil about 4 large chicken breasts in garlic, a tiny bit of onion, and salt. Drain the chicken and shred when cool.

Step 2: You're done!

Line a glass dish with corn tortillas. Layer the shredded chicken, small scoops of refried beans, black beans, roasted chili peppers, and a tiny bit of cheese. Spoon on some green enchilada sauce. Repeat with additional layers. Bake at 375 degrees for an hour. Yum!
