Just because we are busy moms on the go doesn't mean we can't take a moment to stop and make ourselves a delicious lunch. Sometimes it feels like most of my lunches are eating up that last bite of the PB&J sandwich and the last half eaten bite of apple that my kids don't finish in their lunch. When I catch myself falling into that rut, this is lunch I go to. It's healthy, it's got all the stuff in there that'll give us that energy to carry on our busy day and hello lover... it only takes about 8 minutes to prepare and serve. Yes. That's right...
Here is a recipe for a salad that just says yummy to me. It's one of those salads that my kids aren't really asking to share with me... my husband thinks is too healthy and well... when I've invited a girlfriend over to my house for lunch, I'm proud to serve it next a piece of grilled chicken that I've marinated in garlic, red pepper flakes, fresh rosemary & olive oil. I think in a past life, I must have been Chinese because I tell ya, I can’t eat enough Chinese food. I love it all. Mu Shu Chicken, Sezchuan Eggplant, Fried Rice, Eggrolls and one of my absolute favs - Wontons. I love them in soup and I especially love them crispy.
