Greek Yogurt Garlic Chicken...Perfect for the BBQ

Yogurt is one of those things that most people wouldn’t think of eating other than for breakfast.  Well, with all the news about the  Olympics, which are starting in a few weeks,  I’ve been reading all of these articles about these athletes and what they use to stay strong and keep healthy. Athletes actually eat a lot of yogurt because it’s filled with power, protein and probiotics! So with all this talk about yogurt…  It inspired me to make a recipe I haven’t had in a long time!

I’ve always loved yogurt… but Greek Yogurt is fairly new to me…. Probably in the last year or so, it’s really become one of my new favorite staples in our house.

I’ve been making this recipe for Yogurt Garlic Chicken for years and just recently started using Greek Yogurt to make my chicken recipe and let me just say WOW!  Kids are loving it.  Husband is loving it.  I’m loving it!

Greek yogurt (specifically Chobani, which is the one I’ve become addicted to)  is a little bit thicker than regular yogurt, has a bit more tang and a delish flavor! It’s also gluten free, Kosher certified, made with milk free of rBST and provide two times more protein than regular yogurt, five live and active cultures, and three strains of probiotics.

No wonder Olympic Athletes are eating this great stuff… and they’re onto Chobani too, as it’s an Olympic Sponsor… Hence the article that inspired me so much!  If it’s good enough for them, it’s good enough for my family!

OLYMPIC YOGURT CHICKEN
CUCUMBER MINT SALAD
YOGURT DILL SAUCE

Olympic Yogurt Garlic Chicken

In a bowl combine:

  • 1 6 oz. container PLAIN Greek Yogurt (I use Chobani)
  • 2 Garlic Cloves Minced
  • 1 tsp. Garlic Salt
  • ½ tsp. Ground Cumin
  • ½ tsp. Cayenne Pepper
  • 1 tbsp. Chopped Herbs (Cilantro, Parsley or Mint)
  • 2 tbsp. Olive Oil
  • Juice of 1 Lemon

 

I usually use boneless skinless chicken thighs or chicken breasts… but you can use this on any part of the chicken. 

Allow all ingredients to marinate with the chicken for a few hours, if not overnight. 

Place the chicken on the BBQ on medium heat and cook on either side for 5-7 minutes. 

Serve with an easy cucumber parsley salad! YUM

Summer Cucumber Tomato Salad

  • 1-2 English Cukes Peeled & Diced Medium
  • 1 Bunch of Parsley Roughly Chopped
  • ½ Red Onion Diced Small
  • 1-2 Tomatoes Diced Medium
  • Juice of 1 Lemon
  • 2 tbsp. Olive Oil
  • 1 tsp. Dried Crushed Mint
  • ½ tsp. Cayenne Pepper
  • ½ Cup cracked wheat or Bulghur (OPTIONAL)

Combine all ingredients in a bowl, refrigerate for at least 30 minutes.  Serve!

And if you really want to take this to the next level…. Try this!

Yogurt Sauce

  • 1 6oz. container PLAIN Greek Yogurt (Chobani)
  • Juice of ½ lemon
  • 1 Garlic Clove Crushed
  • 2 tbsp. Chopped Dill
  • 1 tbsp. Olive Oil
  • Salt & Pepper

**OPTIONAL to the yogurt sauce... try adding a small can of drained chipotle chiles, adds a great smokey flavor!**

Combine all ingredients in a bowl. Refridgerate for at least 15-20 minutes. Serve over chicken or use as a dip!
