Pineapple Salsa: A Tropical Twist On A Traditional Dip

Whether you’re throwing a casual garden party, hosting a family BBQ, or just having a relaxing evening with some friends, chips and salsa are always a welcome (and easy) addition to the menu.

So this summer, try putting a tropical twist on the traditional chip dip with this tasty recipe for pineapple salsa. Not only is it fun and colorful, but the blend of flavors makes for a spicy, sweet and delicious treat!

Pineapple Salsa Recipe

Ingredients

  • 2 plum tomatoes
  • Half a small red onion
  • 4 inch long piece of seedless cucumber
  • 1/4 cup lightly packed cilantro leaves
  • 1 (or 2 depending on how hot you like it) jalapeño pepper
  • 1 pineapple (you will only use 1/2)
  • 1 lime
  • 1/2 tsp salt

 

Directions

Dice tomatoes, onion and cucumber. Chop cilantro. Combine tomatoes, onion, cucumber and cilantro in bowl. Cut jalapeño in half lengthwise and remove seeds. Finely chop jalapeño; add to bowl.

Peel and dice half of the pineapple. Add to bowl. Add two tablespoons of lime juice and salt to bowl. Mix thoroughly until well combined.

Serve chilled with hint of lime tortilla chips! (The hint of lime chips really bring out the lime juice in the salsa!!)
