Soba Noodle Stir Fry Recipe

It’s a combination of stir fry with veggies, protein, and fun noodles…  It’s soba noodles!

And best of it, it’s a healthy recipe that tastes great. Perfect for a cozy dinner with the family.

Soba Noodle Stir Fry

Ingredients

  • Soba noodles (packaged)
  • 1/4 cup of your favorite teriyaki sauce
  • Cooked shredded chicken
  • Bite sized veggies (broccoli, carrots, cauliflower, bell peppers, cabbage, onion, mushrooms, etc.)
  • 1 tbsp of a light oil (olive or vegetable)

Directions

In a medium pan, saute your veggies in the oil for about 2 to 3 minutes until they are warm and a little soft (no more raw taste).

Toss in your soba noodles.  You can break them up before you add them, or use your wooden spoon to work it out in the pan.

Add in the chicken and the teriyaki sauce.  Stir this all together and let it get nice and warm.

Your kids will love the bright colors from the veggies, and this is a great way to introduce them to new types of foods while getting healthy veggies in them.
