Thanksgiving is almost here and I'm planning my side dishes. This is one of my personal favorites, and I should warn you, it's one of those sides that just might upstage your turkey!
One of the side dishes that I look forward to most on the Thanksgiving Day dinner table is stuffing! Corn bread, seasoned, mushroom, andouille sausage, southwest style, cajun… seriously, I could pull a Forrest Gump here and and name a million and one different kind’s of stuffing that I love.
It's Monday... and seriously, who even wants to think about anything cooking dinner for your family? I'm still thinking about Sunday!!! So let's keep this simple. Let's not overcomplicate things.. but let's make this delicious. Here's the answer: Lemon Chicken Gyro Wraps. Yes, and we are gonna do this in under 20 minutes.
Apples and fall go hand in hand - and when it comes to Halloween, caramel covered apples are a staple in our home! This is the perfect treat to make along with your kids. I guarantee you'll have just as much fun making them as you will eating them.
I never feel like cooking on Friday nights, and I never feel like going out, because I'm too wiped out from the week! So here's my super easy, super delish and super fast recipe for a tasty pasta dish that'll have you from the kitchen to your table in just about the time it takes you to boil your pasta! No joke! Friday Night Pasta
It's around 4 in the afternoon and I start to feel it... The grumble in my tummy, the uncontrollable craving for something salty or sweet or salty and sweet! And just like clockwork, my feet automatically walk over to the kitchen pantry or fridge.
It's summertime! This means we're entertaining more than usual and I know I'm always looking for easy bites to put out in front of my most of the time last minute guests. So what says summer more than this delicious appetizer? (And best of all - it takes literally less than 10 minutes to make!) Avocado Tomato Bruschetta 2 Ripe Avocados 1 Large Tomato
Mother's Day is on Sunday, and if you're a mom like me, it generally means it's one of the only mornings that I can sleep in, wake up to a cup of coffee and possibly breakfast in bed... if I'm lucky enough, it might follow through to lunch or dinner... but I'm not gonna push my luck!
So here it is Mom: The BIG DAY is quickly approaching! Father's Day! Yes, yes... I know you've been waiting for this day all year long. The day where Dad will actually be listened to when he walks around the house proclaiming how strong and powerful he is and how much he contributes to the household! (I'm kidding!)
I just love this recipe for Chicken Curry Salad! It's full of flavor, has tender chicken and great crunch from the lettuce!
What says SUMMER more than an avocado? And what says YUM more than guacamole!!! So what could be better than sharing my favorite guacamole recipe? It's the best one you'll ever have. I promise! Super easy. Super tasty. Tried and true, your friends will be raving about this delicious dip!
Summer time is here and we are all looking for three things... healthy, fresh and delicious. Lucky for us this recipe has it all! While it's perfect for a lunch alone, it's also great if you're having some girlfriends over - it will be sure to impress them. Or even better, a satisfying light dinner for you and your hubby!
Every mom has her own version of this staple recipe in her repertoire. In our house, I know the kids go nuts when they find out it’s spaghetti and meatballs for dinner! Hopefully your kids will too - especially with this recipe!
I love making quiches... they're easy to make and don't require a ton of time in the kitchen. The perfect recipe for the perfect weekend in bed!
If ever there was a fruit that I didn’t mind eating in it’s humiliated form, it would have to be grapes. Golden brown, sweet and chewy raisins are truly a unique thing. And being that this week is National Raisin Week... I think it’s only fair that we place the spotlight on these wonderful little gems!
You know that story that your friend's moms mom, who has an aunt, that had a cousin that worked in the factory plant that prepares those cute little baby carrots told you about? You know, the one who said that they come from all the "reject" carrots and are put through a grinding machine...
Want an easy recipe for a favorite afternoon snack? I was first introduced to empanadas about 12 years ago when I met my husband. Being that he's Venezuelan, empanadas were a main staple in his home. His mother always had them hot and ready-to-go every day when he came home from school.
Sometimes I like to remind my husband that I can cook more than just the simple dinner that I make for the kids. I mean, I'm pretty sure that when the kids come to ask me "Mom! What's for dinner?" if I say "Osso Bucco," then I can say with certainty they're going to go "eeeewww!!!" and "yuckkkk!!!" But if my husband asks me what's for dinner and I say "Osso Bucco," I can say with certainty he's gonna be pretty happy. It's one of his favorite dishes!
Every now and then, I like to mix it up a bit when it comes to making burgers. Take these tasty "mini burgers" - they're perfect for a party or just a fun twist on a traditional meal that's great any night of the week. Not only are they super easy to make, but the variations are simply endless!
Here is a recipe for a salad that just says yummy to me. It's one of those salads that my kids aren't really asking to share with me, my husband thinks is too healthy... but when I've invited a girlfriend over to my house for lunch, I'm proud to serve it next a piece of grilled chicken that I've marinated in garlic, red pepper flakes, fresh rosemary and olive oil. I hope I'm inspiring you for lunch today!
Just because we are busy moms on the go doesn't mean we can't take a moment to stop and make ourselves a delicious lunch. Sometimes it feels like most of my lunches are eating up that last bite of the PB&J sandwich and the last half-eaten bite of apple that my kids don't finish in their lunch.
I'm going out on a limb with this recipe... but if you've ever been inspired to try something different or eaten something in a restaurant and thought, I want to know how they make this, then this recipe is for you!! Everyone’s got their own childhood memories when it comes to food. For most kids in America their earliest or first memories in the kitchen are probably sticking their fingers in some sort of ooey chocolatey batter and licking the bowl clean or eating some raw cookie dough while Mom or Grandma was making some cookies.
Give these puff pastry hearts a try for your loved ones on Valentine's Day! You can fill them with just about anything, but my husband and kids love it when I make them with cheese... you can use smoked, pepper jack, Monterey, cheddar or Swiss... whatever you like. They're delish and sure to show your family how much you love them. So bust out the heart shaped cookie cutters and show some cheesy love!
I think in a past life, I must have been Chinese because I tell ya, I can’t eat enough Chinese food. I love it all. Mu Shu Chicken, Sezchuan Eggplant, Fried Rice, Eggrolls and one of my absolute favs - Wontons. I love them in soup and I especially love them crispy.
This recipe is fantastic for any night of the week. It's gourmet enough for mom and dad to love... but yummy enough for the kids to enjoy as well! It combines some of my (and my kids) favorite things - artichokes, mushrooms and tender chicken pieces.... what more could you ask for?
While everyone might be really jazzed about the changing of seasons, and the fact that winter is in full effect, I'm not gonna lie when I say that I'm kinda missing summer and all that comes with it. The warm sun. The beach days with the kids... and of course the endless BBQ-ing that we do all summer long!
When the holidays roll around, I always break out my repertoire of "go-to" appetizers. This is one of them, but it's so good that I use it all year round! I don't need to say too much about it, they actually speak for themselves.
There’s just something so different and delicious about a roasted Cornish Hen compared to a regular roasted chicken.
Sometimes I get this crazy insane craving for something sweet! Ok, who am I kidding with "sometimes"... it’s on a daily basis that I have a crazy insane craving for something sweet!
Meatloaf was one of those things that my mom always tried to get me to eat and I would consistently refuse.
I can think of no other dish that says warm, hearty and winter health more than Pepper Steak.
Have you ever gone into the supermarket and seen those things that look like giant scallions? Well, that’s a leek. Only this onion on steroids doesn’t taste anything like a scallion, but a refined, subtle, mild, delicate, clean tasting onion. They are fabulous in soups, fish dishes, braised, blanched, poached or in this case made into a gratin.
Every year I compile a list of my top ten favorite kitchen gadgets and tools and forward it an email to all of my family and friends… this holiday season is no exception, only I’m sharing it with all of you wonderful and kitchen savvy mamas out there.
I was staring out my kitchen window this morning and looking out at my pomegranate tree - it's so pretty and it's actually overflowing with fruit! I love this time of year when it's in full season. So I went outside, climbed up on my stepstool and picked a few of them. It takes a little bit of work to get those deliciously sweet and tart seeds out of the fruit, but whether you do it in a bowl of cold water or cut them open and take them out one by one... it's seriously worth it!
There's no doubt that holidays can put a little pudge in the figure. Luckily, we've already made it past one of them! Here's a light white fish recipe that's not only healthy but tasty as well! It just might help you get through the holidays with your waistline intact.
When the chaos of Thanksgiving threatens to overwhelm you, just remember that in about 24 hours it'll all be over. And then you're left with the remains: Stuffing, Sweet potatoes, Mashed potatoes, Green beans, Cranberries, and TURKEY!!! AHHH!!! TURKEY! TURKEY! TURKEY!
Wouldn’t it be brilliant if your diabetes, high cholesterol and blood pressure problems were just like a food allergy - and you could simply avoid that food, take your meds and you’d be all set?
I'm on a soup kick this week... and LOVING it! Fall is definitely here and the cold snap in the air gives me such a craving for some hot, luxurious and delicious soup.
When I was a kid and we’d go to an Italian restaurant, there was one dish that I ordered every single time without fail - manicotti. It was my staple dish; no matter how many other delicious things there were on the menu, all I wanted was manicotti. Those delicious little tubes of al dente pasta filled with soft creamy ricotta cheese and spinach and topped with a light pink cream sauce was truly my idea of Italiano heaven!
When the weather turns chilly, what's more comforting than a bowl of hot and hearty soup? It's the perfect thing for a cold winter day - a delicious dish that fills you with warmth and good cheer.
Planning to throw a Halloween bash this year? If you need a spook-tacular appetizer to serve at your party, look no further. Try these devilish eggs - they look great and taste even better! Creepy Eyeball Eggs Ingredients
Chicken happens to be one of those things that I think we lose sight of and forget how tasty it can actually be. I can say with certainty that when I tell my husband we are having chicken for dinner, he gives the "oh... ok" sigh as I like to call it. He says it's boring but I disagree. I love chicken and I think if it's done right, it's all good!
When I think about comfort food, I usually think... heavy, fattening, deep fried, and guilty guilty guilty!!! Luckily, this recipe for chicken parmigiana is not only delicious comfort food but leaves you guilt-free. It's a light, fresh and easy version of the classic dish, so you won't feel bad going back for seconds!
As most of you know by now, I’m a mamma with three little ones in school full time. And as most of you might also know if you’ve read any of my previous blog entries, I actually DO wake up in the middle of the night in a slight panic thinking about what they ate that day.
To juice box or not to juice box… that is the question. School's back in session, and I can almost guarantee that for the next 187 days, one thing you're going to be thinking about is your kid’s lunch box and what’s going inside of it! I usually start thinking in my head the night before, wondering what exactly I am going to put in my son’s lunch box that's A. healthy, B. nutritious, and the all-important C. he’s going to eat! Well, let me absorb part of your concern right here and now, and give you one less part of the lunch box to think about: what your child drinks!
Power foods. You hear about them often: "Bulk up on your power foods!" or "A diet rich in power foods is super healthy for your!" But what exactly are power foods?
In our house, we are in the full swing of summer & the full swing of summer camps! We have soccer camp, art camp, zoo camp & let's not forget swimming camp! Along with all of these camps come lunches!
We all go through it with our kids: The daily struggles of getting them to eat their fruits & veggies. Sometimes it's so gratifying and rewarding when you actually win the "battle" before it even starts!
You most likely can get your kids to make fish faces faster than you can get them to eat them, right?!!
Summer's almost here and for most of us that means being on the go-go-go with our kids kids kids! It also means you're most likely going to be scrambling for snacks for your hungry little ladybugs and tigers all day long!
Summertime has to be one of my favorite times of the year...sunshine, swimming pools and, of course, BBQ's! And what's better than BBQ-ing on a Saturday afternoon? It's probably about the only meal I prepare that I can get my kids to eat all of their chicken, steak or fish without any fuss. They gobble it down!
On Monday, we celebrated National Licorice Day! Before you all go run out to Costco and buy those economy size tubs of Red Vines... pump the brakes!! It turns out black licorice is actually the way to go!
