Quinoa Arugula Salad

Quinoa-Salad-Healthy

My friend Julie brought this salad to my house and it was so delish that I told her I needed to share it. It is her go-to salad and is super easy but doesn’t seem that way. It’ll please even your gourmet friends :)

Ingredients:

1/2 to 1 cup cooked quinoa

1/2 to 1 cup pine nuts

1 small jar of sundried tomatoes marinated in olive oil

Bag or bunch of arugula

Olive oil

Lemon juice

Himalayan pink salt (or any salt will do)

Directions:

Cook quinoa and let it cool. Roast the pine nuts and let them cool. Chop up the sundried tomatoes.

Once everything has cooled, toss the quinoa, pine nuts and sundried tomatoes in a bowl with the arugula.

Dressing: Use 75% olive oil and 25% lemon juice. Since everyone likes a different amount of dressing you can kind of eye ball this.

Add the dressing right before you serve it and walah – delish!
