Strawberry Yogurt Freeze Recipe

November is National Diabetes Month and contrary to popular knowledge, people living with diabetes don’t have to avoid fruit. Strawberries, for instance, provide essential vitamins, antioxidants and dietary fiber that according to the American Diabetes Association are one of the top ten superfoods for a diabetes meal plan. According to California Strawberries website, one serving (8 medium-sized strawberries) has more vitamin C than an orange and has the lowest amount of sugar among popular fruits.

The good news about strawberries comes at a great time because my kids are loving this strawberry yogurt freeze after soccer practice and we are absolutely obsessed with our Vitamix 7500. Nothing compares to this machine – it chops, blends, creams, purées, like no other. But I digress, check out the recipe for a simple Strawberry Yogurt Freeze and for a delicious Strawberry smoothie.

Strawberry Yogurt Freeze

Ingredients:

1 pound California strawberries
1/2 cup lowfat vanilla yogurt
1/2 cup nonfat greek yogurt (this really beefs up the protein in this smoothie)
1 cup ice

Preparation:

Place all ingredients in your Vitamix (if you aren’t lucky enough to have one, then a blender will work). Blend but do not over mix. This should be the consistency of a sorbet. You want to eat it with a spoon, not a straw. Although, it would be tasty either way!

Straw-BERRY Good Smoothie

Ingredients:

1 cup California strawberries
1 cup low fat milk
3 TBS frozen grape juice concentrate
1/2 cup low fat vanilla or blueberry yogurt

Preparation:
Place all ingredients in a blender and puree until smooth. Garnish with sliced strawberries and a mint sprig, if desired.
