Why Choose Pure Maple Syrup + Supercharged Waffle Recipe

Living in Vermont, we are fortunate to have some of the most delicious pure maple syrup on the planet. We produce more real maple than any other state. There are only a few regions in the world that have the right climate for sugar maple trees. (New England, upstate New York, Michigan, the Maritime Provinces, southern Quebec and Ontario)   This makes our liquid gold one of Mother Nature’s sweetest gifts.

Pure maple is 100% organic and natural, with no preservatives. Nothing is added when making the syrup, instead water is removed from the sap. Many families have perfected this art form through multiple generations. The sugaring season is mid-February to mid-April, but the ongoing management of the forest for the maple production is year round. Early spring is when the process of “tapping the tree” occurs. The sap only flows when the temperatures rise into the 40’s during the day and cool off into the 20’s at night. This is a labor-intensive process that requires drilling a tiny hole into each tree, and then tapping a spout ever so gently into that hole. Tapping a tree doesn’t cause any damage when done properly. Trees can be tapped for over 100 years and will still thrive. It requires massive precision, if the tree is tapped too early the hole will eventually dry out and stop running prematurely; too late and the farmers have shortened an already short season and diminished their supply of sap. Farming sugar maples is a true passion and endures many long hours of hard work and knowledge. Did you know that it takes 40 gallons of sap to make one gallon of maple syrup?

Pure maple is rich in calcium, potassium, magnesium, phosphorus and iron. It also contains trace amounts of amino acids, which are the building blocks of protein. It is also a natural source of beneficial antioxidants. Antioxidants protect us from environmental toxins and they help support the immune system. It is the most nutritious of all other common sweeteners and contains the lowest amount of calories.
