Mini Sweet Potato Pies

Sweet potatoes with marshmallows is a very traditional (and delicious) side dish for Thanksgiving.

This recipe for mini sweet potato pies is a cute way to update the old classic!

Mini Sweet Potato Pies Recipe

Ingredients

  • 3 large sweet potatoes
  • 1 C low fat milk
  • 1 t cinnamon
  • 1/2 t nutmeg
  • 3 egg whites
  • 2 eggs
  • 1/4 C softened butter
  • 1 C sugar
  • 1 t vanilla extract
  • mini marshmallows

Directions

Poke the sweet potatoes with a fork, wrap them in aluminum foil, and bake at 400 degrees for 1 hour.  When the potatoes are soft, take them out of the oven and peel off the skin.
Place the baked, peeled potatoes in a large bowl.

Add milk, cinnamon, nutmeg, eggs, butter, sugar, and vanilla and mix for 2 minutes until smooth.

Pour mixture into muffin tins with paper liners, half-way to the top.

Bake at 350 degrees for 20 minutes.

Remove from the oven and top each pie with mini marshmallows.

Turn the oven to broil and cook for 30 seconds to brown the marshmallows.
