Sugar Mommas' Book Buzz!

Sugar Mommas’ Book Buzz: Once in awhile we like to suggest a book that has something to do with baking.  In anticipation of Halloween, we are recommending, Ghoulish Goodies: Creature Feature Cupcakes, Monster Eyeballs, Bat Wings, Funny Bones, Witches’ Knuckles, and Much More, by Sharon Bowers.

Sugar Mommas’ Monster Eyeball Morsels

You will need:

Meringue Cookies (recipe below)

White Frosting (pre-made)

Blue Gel-Writing Icing +

Red Gel-Writing Icing +

Pastry brush or knife to spread frosting

 

Meringue Cookies

3 egg whites*

½ tsp. vanilla extract

¾ c. granulated sugar

 

*           Preheat oven to 175º.  Line 3 cookie sheets with parchment paper.  With an electric mixer, beat egg whites on medium speed until frothy.  While the mixer is running, add vanilla extract.  Slowly add the sugar, ¼ cup at a time.  Increase speed and continue to beat until the meringue forms glossy, smooth, stiff peaks, 1-2 minutes. 

*           If you are skilled with a pastry bag, put a round ½” tip onto a bag.** (For an easier version, see CHEAT! below).  Fill the pastry bag with the meringue. Pipe out 1” round circles onto the parchment paper.  Continue until you use all of the meringue. 

*           Bake 2 hours. Remove pans and cool.  Cookies should pull away from parchment paper.  Careful not to crush the cookies.  Store cookies in airtight container until ready to decorate. Yields aprox. 60 eye balls. 

 

NOTE TO SELF: These meringues are delicious. Eat a bunch before you decorate them all or set them aside for a midnight snack!

 Carpool Crunch

*If you don’t have time to separate eggs and yolks, dash to the market to buy pre-packaged egg whites in the carton.  3 large eggs = 9 oz. of the liquid egg whites.

 CHEAT!

**The Sugar Mommas like instant gratification. If you don’t have time or money to run out and buy baking supplies, we have your solution.  Use a soup ladle to pour the meringue into a Ziploc bag.  When it’s half filled, zip it shut.  We like the freezer bags because they are thicker. Use what you have available; quart or gallon size.  Turn the bag on its side to shimmy the meringue into one bottom corner.  With a scissors, cut a small snippet off the empty corner.  Keep the cut corner turned up; gather the plastic just underneath the Ziploc strips between your thumb and index finger.  Slowly, point the cut corner towards the parchment lined pan and squeeze out a blob while making a quick circular motion.  Tip the cut side up until you are ready to make the next blob.  Keep in mind you can’t go wrong for creepy Halloween eyeballs!   

 Decorate

Use a clean, food safe paint brush (small pastry brush) or a knife to spread the frosting on each eyeball.  Let the frosting set 1 hour.  Use the blue tube to make a dot in the center of the cookie. Then draw a circle around the dot. Use the red tube to make squiggle lines down the sides of the cookie to make the eyeball look bloodshot!  Let the frosting set about one hour. EAT!
