Chances are one of your kids or their friends has a food allergy—or they follow some sort of a specific diet. It started hitting home for us personally when Tammy’s daughters couldn’t bring nuts or peanut butter sandwiches to school because kids in their classes were allergic to them. Serving afternoon snacks started to get a bit challenging when we wanted to make sure they were safe, allergy free, healthy and something that the kids would actually want to eat! That’s why we love making these muffins!

Unbelievably, the’re 20 calories each! Wahoo! And truthfully, we can barely believe it ourselves that something so insanely delish could be so low in calories.

Plus, we made an AMAZING applesauce muffin recipe that is almost everything free, but not free of any delicious flavor!

If you’re hosting kids play dates and someone has allergies, these are the perfect muffins for you to serve. Diabetic and waist-line friendly, gluten free, dairy free, egg free, tree nut free, AND soy free, these muffins are sponge soft and even impress those without food allergies. They are healthy and safe to serve to just about anyone! The beauty of these muffins are they are versatile, you can dress them up with dried fruit or nuts (if you aren’t watching out for allergies!) and make them how you please, however, we like them best when they stand alone!

Another bonus? These muffins offer some health benefits, too. They’ve got flax seeds which contain omega 3s (antioxidant and anti-inflammatory benefits) which may help reduce your risk of heart disease, stroke, cancer, and diabetes. That’s quite an enormous order for such a minuscule seed.

Apple-y Skinny Mini Muffins

Yield 24 muffins

Ingredients:
¼ cup unsweetened applesauce
1 cup gluten free biscuit mix (the texture is not as impeccable if you substitute with a gluten free flour)
¼ cup stevia (or your favorite sweetener)
2 tbsp. trans-free all natural soft-spread, at room temperature
¼ tsp. sea salt
2 tbsp. milled flax seeds
¼ cup water
½ cup rice milk
¼ tsp. vanilla
2 tsp. baking powder

Directions:
Preheat the oven to 350 degrees.
Mix applesauce, sweetner, and soft spread together. Mix in biscuit mix, then remaining ingredients.
Pour into 24 mini muffin tins and bake for approximately 30 minutes, or until brown.
