Here’s the recipe:
Quinoa Salad Recipe
Ingredients
- 1 cup of quinoa
- 1/2 cup of cherry tomatoes for color (whole or halved)
- 2 raw chopped zucchini
- 1/2 cup of cooked black beans
- 2 chopped celery stalks
- a handful of chopped parsley
- 1/4 finely chopped white onion
- 2 tbsp olive oil
- lemon juice
- salt and pepper to taste
Directions
Prepare quinoa and set aside to cool when finished.
In a large bowl, add the following ingredients to your room-temperature quinoa: celery, parsley, zucchini, black beans, and cherry tomatoes.
Mix in remaining ingredients, drizzle with olive oil and add salt and pepper to taste. Add the juice of one lemon.
Serve warm or cold!
