Looking for a tasty veggie side dish? How about miso eggplant?! It’s super easy and definitely delicious.
4 Japanese eggplants
2 Tbsp miso
2 Tbsp rice wine vinegar
3 Tbsp soy sauce
Wash the eggplants and slice in half. Preheat the oven to 400 degrees.
Mix the miso, rice wine vinegar and soy sauce in a small bowl.
Place eggplant halves on a greased baking dish.
Bake for 15 min.
Remove from the oven and pour the sauce over the eggplant.
Return to the oven and bake 5-10 more minutes.
Serve warm. Delish!
