Salsa doesn’t have to be all about the tomatoes! See for yourself, and try out Brooke Burke’s recipe for spicy Zucchini Salsa Verde.
There are only so many ways to get your kids to eat zucchini, and who really wants to bake bread during the summer? This tasty salsa is a simple and summery way to get little ones to eat their veggies, because who doesn’t love chip and dip?
Zucchini Salsa Verde
Ingredients
- 2 zucchinis, cubed
- 1/4 cup of onion
- a handful of fresh cilantro
- 1/2 tsp of coriander
- deveined and seeded jalepeno
- 5 tsp of lime juice
- salt
Directions
In a food processor or blender, mix all the ingredients together.
If it is looking too thick, add a little bit of water.
Pour into a bowl, and garnish with some fresh cilantro to serve with your favorite tortilla chips. It’s also fantastic over grilled chicken or fish or even over your favorite enchilada recipe! Brooke recommends trying it over salmon.
