Get a little creative with this twist on a classic side salad!
- 5 heads of endive
- cherry tomatoes
- 2 Israeli cucumbers
- French Dijon shallot dressing
- salt and pepper
Slice and wash your endives. Cut a few handfuls of cherry tomatoes in half. Slice two Israeli cucumbers in circles.
Toss the veggies all together with my French Dijon shallot dressing. Add salt and pepper to taste.
