Brooke Burke’s Baked Chicken Recipe

Need an idea for dinner? Brooke Burke shares one of her favorite recipes for baked chicken that’s great for the whole family!

Ingredients

  • 2 packages of whole cut chicken, or just your favorite parts
  • Olive oil
  • Cumin
  • Salt and pepper
  • 1/2 cup green olives, whole, pitted
  • 1/4 cup slivered almonds
  • White onion
  • 2 heads of fresh garlic

 

Directions

Wash and dry two packages of chicken pieces.  My family loves drumsticks and thighs, but I try to go for some breasts, too.

Rub with olive oil, salt, pepper, and sprinkle with cumin.

Cover the bottom of a baking pan with the chicken.  Sprinkle chopped onion over the top.  Bury garlic cloves in the mix.  Add in pitted green olives and slivered almonds.

Bake at 350 degrees uncovered for 45 minutes, or until golden brown.  Tightly cover with aluminum foil, and bake another 45 minutes until the chicken falls off the bone with your fork.

My family also loves to eat the fresh garlic, which squeezes out of its shell easily after baked.
