This delicious frittata is packed with protein and nutrients your body needs. My daughter Rain loves this!
- medium sized skillet
- 2 egg whites
- 1 splash of milk
- 1 whole zucchini
- olive oil
- salt and pepper to taste
- Parmesan cheese (optional)
Spray the skillet with olive oil spray. Shred zucchini and add it to the skillet. Let the zucchini brown.
In a mixing bowl, beat two egg whites. Add a dash of salt and a splash of milk. Stir until completely mixed.
Add the egg mixture to the skillet so that the mixture covers the bottom of the pan. Allow the egg to cook and flip it over carefully to cook the other side.
Sprinkle Parmesan cheese on top (optional).
