This veggie protein bowl is delicious and nutritious. You can also vary it up. Get creative. Food art is fun and a great way to utilize leftovers!
1 cup of brown rice or quinoa
1/2 cup of sweet potatoes
1/2 cup of garbanzo beans or black beans
1 cup of desired greens
Protein – egg or grilled chicken or grilled salmon
All ingredients can be prepared in advance. This can be served as a hot or cold dish.
