Cilantro Pesto Recipe
Cilantro itself is low in calories, and thought to help with disease prevention and health promotion. Its deep green leaves contain antioxidants and fiber, as well as beneficial essential oils. Cilantro is a good source of vitamins and minerals, and is one of the richest herbal sources of vitamin K.
There are many reasons to make this cilantro pesto. Both tasty and health beneficial, it’s good on any number of dishes from pasta to potatoes, and summer salads. It would also make a mighty delicious sandwich spread. When I made the cilantro pesto I tossed it over 2 large diced potatoes for a healthier version of potato salad.

Cilantro Pesto
Ingredients:
2 cups cilantro
½ cup pine nuts
2 Tbsp. fresh lemon juice (about ½ a lemon)
2 Tbsp. extra virgin olive oil
1 Tbsp. water
½ tsp. sea salt
¼ tsp. pepper
For additional flavor (optional):
Add 1 to 2 cloves garlic, peeled
Directions:
Add all ingredients to a high speed blender. Slowly increase speed to high, blend for approximately 1 minute.
