ModernDad Drew Brees' Favorite Dessert

Friday morning, a couple of ModernKids (Lisa’s boys!) had the chance to sit down and interview one of their favorite football stars, Drew Brees. Brees is the New Orleans Saints quarterback. The ModernDad has two sons with his wife Brittany. Brees shared some great advice with the boys. He also shared his favorite recipe for strawberry pie! It sounds delicious! Get out a ready-made frozen pie crust and throw this together for an after dinner treat.

What you need: First layer filling

1 cup coconut milk,
3 eggs,
1/4 cup sugar,
1/2 teaspoon vanilla flavoring and
1 tablespoon cornstarch

What you need: 2nd layer of filling

3 cups fresh strawberries, hulled

What you need: 3rd layer of filling

1 cup fresh strawberries, smashed or pureed, 3/4 cup water and
2 tablespoons of cornstarch.

Combine

In medium saucepan, combine ingredients for 1st layer. Heat over medium heat until mixture begins to thicken, stirring constantly to avoid curdling. Spread evenly on bottom of piecrust. Allow to cool to room temperature.

Arrange

Arrange fresh whole strawberries, tops down, in even manner on top of 1st layer. Set aside

Complete

In small saucepan, combine ingredients for 3rd layer. Stir well and cook over medium heat until mixture thickens. Spoon evenly over berries and refrigerate for at least 2 hours to chill. Top with (dairy free) whip cream and serve. All done! Time to eat like a champion…
