CHANGE- The process of becoming different

I am way overdue for my latest blog because so much “change” has been going on around me, and the world, that I have had no idea where to begin writing.  Let me fill you in on what has been going on around me.  First of all, this month I have said goodbye to 7, yes 7, good friends of mine!  All of them leaving Los Angeles for different reasons, all of them being good.  Some of my friends are moving closer to their families, some are moving for new job opportunities, some just to wanted to change of scene.  I am actually doing quite well, maybe the shock has not kicked in yet!  My whole social routine has changed and I am being forced to try/do things I would not normally do in my old social scene.  I did my research on what the number “7” stands for and why people call it “lucky”  I found it to be very interesting in how “7” relates to the fields of Astronomy, Biology, Chemistry, Mathematics, Psychology, Physics, Religion, etc.

The change in the weather has also been quite radical as well.  Last week was somewhat cool and overcast.  One day it even down poured really hard!  This week is completely different. It is like we are living in the middle of the Sahara desert. Because we are experiencing such drastic changes in weather I still have my winter clothes unpacked in my living room for easy accessibility situated directly below my air conditioning unit which I sleep next to for those hot “Sahara” nights when I wake up in a puddle of sweat.  What is Mother Nature trying to tell us?!  At least Mother Nature is a bit happier now that PB Oil Co. has apparently stopped the oil leak…for now.  What a sad, sad, sad, sad mess.  This disaster has changed the lives of so many people and the environment in so many different ways it is hard to fathom what the long term affects will be.

Like I said before, there is a lot of change going on around, so I decided to change a couple of my recipes and hopefully you will enjoy them too!  The kids will absolutely love these traditional items with a twist.  Or maybe you will love them so much you will want to share them with your friends, as the recipes are age appropriate for everyone to enjoy.

CHIPOTLE CHILI POPCORN to make the summer even hotter!
You will need-

peanut oil
popcorn kernels
butter
chili powder
dried chiles
sea salt
chili powder

To begin get a large saucepan with a lid and place it on medium heat, with peanut oil.  Add a cup of popcorn kernels, put the lid on and shake every few seconds. When they begin to pop add a pat of butter and about 1 teaspoon of chili powder (can use smoked chipotle chili powder).  Keep shaking the pan until it’s all popped, then tip the popcorn onto a big tray and season to your liking with sea salt and 1 teaspoon of chili powder, to taste and ENJOY!

MA’s ZUCCHINI BREAD doesn’t take like a vegetable!
You will need-

3 eggs
2 cups sugar
1 cup oil
2 teas spoons vanilla
2 cups raw graded zucchini, or use Cuisinart

2 cups flour
1/4 tea spoon baking powder
2 tea spoon baking soda
3 tea spoon cinnamon
1 tea spoon salt

1 cup chopped nuts

Mix the first 5 ingredients together in a bowl.  Sift the second 5 ingredients together in another bowl.  Mix both bowls together and add the cup of nuts.  Bake in one 9X13 pan for 1 hour at 350*, or in 2 small loaf pans for 45 minutes at 350* and ENJOY!

SWEET SUMMER TEA with a twist!
You will need-

Tea packets of choice
Crystal Light Raspberry Ice Drink Mix

Instead of making plain old iced tea, spice it up a little.  In the case, sweeten it up a little.  Add a packet or 2 of Crystal Light Raspberry Ice and store in the refrigerator.  It gives you a more refreshed taste and has only 5 calories, no sugar and no caffeine!
