Have a Healthy Lunch in a Jiffy!

Just because we are busy moms on the go doesn’t mean we can’t take a moment to stop and make ourselves a delicious lunch.  Sometimes it feels like most of my lunches are eating up that last bite of the PB&J sandwich and the last half-eaten bite of apple that my kids don’t finish in their lunch.  

When I catch myself falling into that rut, this is my go-to lunch recipe.  It’s healthy, it’s got all the stuff in there to give us the energy to carry on our busy day and – hello lover… it only takes about 8 minutes to prepare and serve. Yes. That’s right… a quality meal in under 10 minutes.  

And seriously, if you can’t manage to give ourselves even 10 minutes a day to eat… honey, it’s time to call in reinforcements and get a sitter!  

So here is my favorite lunch in a jiffy:

Chicken Tenders Lettuce Wraps

Ingredients

  • 2-3 Chicken Tenders (they’re thin and easy to cook) 
  • 1 Chopped Scallion
  • 1/4 Chopped Green or Red Bell Pepper
  • Drizzle of Olive Oil
  • Fresh Chopped Herb (I use Oregano… but Rosemary, Tarragon or your favorite one will do) 
  • Garlic Salt
  • Salt & Pepper
  • Iceberg Lettuce Cup
  • 2 Slices of Tomato
  • 1 Tbs. Store Bought Hummus

 

Directions

Ok, here we go… this is super simple and super quick! In a Ziploc bag throw in everything but the lettuce, tomato and hummus. Give it a little mix up in the bag.  

Grab a frying pan and put it on high heat…. throw that chicken in there… cook on each side for about 3-5 minutes.

Remove from pan a put right into your lettuce cup. Schmear some of that delish store bought hummus on top and then top that with some fresh slices of tomato.  YUM YUM YUM!

If you want to really get fancy you can add some canned Fire Roasted Red Bell Peppers, Kalamata Olives, Sliced Red Onion…. See… now I’ve got you thinking! 

This is the perfect recipe for lunch or dinner! So if you’re gonna take those 10 minutes to yourself in the day… make ’em count!  I think this says it all!  Enjoy your week!!
