Strawberries and Cream Parfait

February 14th comes every year and each time we all silently think – I wonder what we will get? Candy and a card? Flowers? Or maybe a romantic dinner? How ever you decide to spend your day we hope it is filled with love, luxurious food, and time spent with loved ones.

This year it falls on a Sunday, so there is more time to plan and prepare. We want you to indulge and keep it healthy. Splurge on the presentation – Judy and I insist that it has to look fabulous. We have chosen this simple but decadent dessert for you. Rich in antioxidants and protein and all dressed up – Valentine style.

Strawberries & Cream Parfait

Rose are red, violets are blue strawberries are scrumptious and good for you too!!

1 cup plain yogurt*

1 pint organic strawberries

nuts, any kinds (optional)

Strawberry Chia Jam

2 cups strawberries, de-stemmed and chopped in half

¼ cup maple syrup, honey or agave (optional)

2 Tbsp Chia Seeds

Water or coconut water as needed

Directions

Place chopped strawberries, chia seeds and maple syrup (or sweetener of choice) into a small saucepan and heat over medium heat until the jam begins to bubble. Reduce heat to low and simmer for 5-7 minutes, or until the jam starts to thicken. Smash the strawberries a bit with a fork for a chunkier texture or mixture can be put into a blender for a smooth consistency if you prefer that.

Remove from heat and immediately pour into a mason jar. Allow to cool completely and then store in the fridge for up to one week.

To assemble parfait:

Begin by choosing serving piece of your choice. Alternate layers of yogurt, jam and nuts until glass is full, Top with a strawberry and a generous drizzle of jam, enjoy!!!

*soy, coconut,  almond milk blend yogurts are fine also.
