  • 1 box organic tri-color quinoa
  • 1 box organic chicken broth

  • salt and pepper to taste

Directions:

Prepare your quinoa. Then rinse and drain for about 20 minutes to let it dry.

Toast it for about five minutes until it smells warm and nutty.

Bring the chicken broth to a boil.  Cook quinoa by simmering it for about 20 minutes, covered, and then letting rest (off the burner, uncovered) for 20 minutes. Use just over one part broth per one part quinoa (we recommend 1 1/2 parts liquid per 1 part grain).

Fluff the quinoa with a fork.

Add mint, almonds, and cranberries to quinoa.

Add salt and pepper to taste (start with just a pinch).

This is delicious warm or chilled, and so easy for a very healthy meal!
