What’s For Dinner? Chicken Kabobs – Yum

Chicken Kabob & Armen’s Armenian Rice Pilaf

Prep: 15 minutes
Total: 2.5 hours

Ingredients
• 6 chicken breast, boneless, skinless, 1-inch cubes
• 8 ounces mushrooms, halved
• 1 red onion, cut into 1-inch slices
• 2 red peppers, cut into 1-inch slices
• 3 tbls yogurt or sour cream
• 2 tbs olive oil
• 1 1/2 tbs salt
• 1 tbs pepper
• 1 tbs red pepper powder
• 2 tbls lemons juice
• 1 tbs garlic powder

Directions
1. Add all wet ingredients together in Ziploc bag
2. Add dry ingredients and mix well
3. Place chicken cubes in Ziploc bag mix well
4. Place Ziploc in the refrigerator to marinate for at least 2 hours
5. Soak skewers in a pan covered in water to prevent burning
6. When ready to assemble kabobs, alternate meat and vegetables
7. Preheat grill to medium heat
8. Place the skewers on the grill and grill for 4-6 minutes per side
9. Serve with Rmen’s Rice (See Rmen’s Rice Recipe)
Prep: 5 minutes
Total: 25 minutes

Ingredients
• 4 Tbls Butter
• 1 cup long grain rice, uncooked
• 2 oz fine egg noodles
• 2 cup chicken stock

Directions
1. Melt butter in large saucepan on medium heat. Saute rice and fine egg
noodles until golden brown. Add chicken stock and stir to mix.
2. Reduce heat, cover and cook for 20 minutes until rice is done.
3. Remove from heat and let stand, covered, for 5 minutes before serving.

Hummus & Pita Chips
Prep: 5 minutes
Total: 10 minutes

Ingredients
• 1 clove garlic, peeled and crushed
• 2 tablespoons olive oil
• 1 (15 ounce) can garbanzo beans (fresh may also be used), drained
• 3 tbls. sesame paste (tahini sauce)
• 3 tbls. lemon juice
• 1/4 tbs cumin
• Salt to taste
• Red pepper/paprika powder (optional garnish)
• Olives (optional garnish)

Directions
1. Place garbanzo beans in a blender or food processor. Process until
smooth
2. Mix in the garlic, sesame paste (tahini), salt, lemon juice and cumin.
Blend to desired consistency
3. Chill in the refrigerator until serving
4. Spread hummus on plate/bowl garnish with red pepper powder or paprika
(optional garnish)
5. Drizzle olive oil over hummus
6. Serve with pita chips
