If you are looking for a refreshing dish that is cholesterol-free, full of Vitamin C, Vitamin A and potassium, then you will want to try a kiwi, strawberry and spinach salad. It has tart, sweet and unami flavors that will please the palate without adding heart-clogging oils or dressings. It is simple to prepare, so it is a good recipe for kids or the culinary-challenged.
Peel the kiwis and cut them into 1/4-inch slices.
Cut the strawberries into fourths.
Rinse the spinach. Tear it into bite-sized bits.
Put the kiwis, spinach, strawberries and walnuts in a large bowl.
Mix the raspberry jam, raspberry vinegar and oil together in a small bowl. Pour it over the salad.
Toss the salad and serve. This recipe makes enough for eight servings.
