Watermelon Mint Refresher

Watermelon is plentiful at farmer’s markets and grocery stores during the hot summer months.  Of course it’s delicious to eat in slices, but why not try something new?  This watermelon mint refresher is perfect to serve at a summer BBQ, a birthday party, or just on a Thursday afternoon.  

Ingredients:

8 cups seedless watermelon cut into cubes, chilled

juice of 2 lemons or limes (about ¼ cup)

½ cup fresh mint leaves (reserve a few mint leaves for garnish)

Place the cubes of watermelon, lemon or lime juice in the blender and blend until smooth.  Garnish with mint leaves and watermelon slices and serve.
