After you carve that pumpkin, don’t throw out the seeds! Roasted pumpkin seeds are delicious and easy!
Preheat oven to 350
Rinse and drain pumpkin seeds, place them on paper towel to dry for a few minutes.
Add a little olive oil in a bowl with the seeds and stir (or for lo-cal option, spray with olive oil cooking spray)
Spray cookie sheet with olive oil spray.
Spread seeds evenly on cooking sheet and sprinkle with salt or garlic salt.
Bake for 12-15 minutes or until golden brown.
Cool and eat!
