Healthy Breakfast Wrap

When I first moved to L.A., I had the pleasure of dining at this adorable café on Sunset Blvd. I devoured a breakfast wrap that I still think about to this day.

The restaurant is no longer there, but I continue to make a slightly healthier version of the wrap from time to time and have no doubt it will be a hit with the kiddies. It’s delicious, quick and easy!

Ingredients (makes 1 wrap)

  • 1 whole wheat tortillas (or low-carb/fat flush tortillas work too)
  • 1 spoonful of all-natural peanut butter
  • ¼-1/2 banana, thinly sliced
  • Spoonful of plain Greek yogurt
  • ¼ cup low-fat granola
  • Cinnamon
  • 1 drop of vanilla extract
  • Chia seeds (optional)

Directions

Mix together a spoonful of yogurt and a drop of vanilla extract in a small bowl. So many vanilla yogurts are filled with sugar so I do this instead. Stir in granola and chia seeds into yogurt and mix until the yogurt and granola are completely combined.

Spread a thin or thick layer of peanut butter on the tortilla, and place sliced bananas on top of the peanut butter covering most of the tortilla, except the edges.

Scoop yogurt and granola mixture into the center of the tortilla and roll tightly. You can enjoy as is or warm in the microwave for 20-30 seconds.

This can be breakfast, a snack or dessert!
