What We’re Cooking Tonight: Cheddar BBQ Muffins

Here is quick and easy recipe that is sure to be a hit! These Cheddar Barbeque Muffins are a family favorite, and not just with the kids, but parents too! For large families or hungry teens, a double recipe may be necessary because they go quick. There is no measuring required and very little prep. Next time you’re in need of an appetizer, try making a mini version of these using mini muffin cups. To switch things up, replace the ground beef with ground chicken or turkey or, for a vegetarian version, try beans. I hope you enjoy these as much as my family does!

Ingredients

1 tube refrigerated multigrain croissants,
1 lb ground beef,
¾ cup BBQ sauce,
1 cup cheddar cheese,
and a touch of Salt & pepper to taste.

Step 1

Preheat oven to 375°F.

Grease 8 muffin cups using non-stick cooking spray or butter.
Separate dough into 8 triangles. Press each one along the bottom and up the sides of muffin cups. Using a fork prick a few holes in the bottom of each muffin.

Step 2

Heat a large skillet over medium heat, add ground beef and season with salt and pepper.
Cook beef until no longer pink and cooked through.
Drain excess fat.
Add BBQ sauce to ground beef and stir until well coated.

Fill each muffin cup with the BBQ beef mixture.
Top with shredded cheddar cheese.

Step 3

Bake until golden brown, about 13 minutes.

Cool slightly, about 5 minutes, then remove from muffin cups and serve warm. Bon appetit!
