Oatmeal Stuffed Baked Apples
We love when we come across a recipe that we can each put our own spin on. This one can double as a healthier choice for breakfast and then again as a fabulous dessert.
The Twice Baked Twins eating a piece of fruit with their morning cuppa? I don’t think so! But this recipe may just do it! Judy loves this dish as a healthy breakfast choice.
What could be a better than sweet apples and creamy oatmeal to start the day? It’s just so versatile. Add whatever your family enjoys from protein powders, sweet fruits and fruit juices to any kind of nuts.
Joy loves to serve it as dessert with a thick, creamy, vanilla bean custard sauce with a dollop of fresh cream. Our mom used to make this for us all the time when we were kids and the warm memories are deliciously remembered with every spoonful.
Whether you cook it slowly in an oven or give it a quick zap in the microwave, an oatmeal baked apple is a quick, more nutritious alternative to fat laden recipes or sugar filled cereals. The hollowed out apple makes a wonderful presentation for anyone and the kids will love it too. Enjoy!

Oatmeal Stuffed Baked Apples
Ingredients
- 3/4 cup oatmeal
- 1 1/4 vanilla almond milk (any type milk can be used or fruit juices as well)
- 1/4 cup unsweetened applesauce
- 1/4 of an apple chopped
- sprinkle of apple pie spice
- 1 tsp vanilla
- 1 teaspoon agave
- chopped almonds, optional
- additional berries, optional
Directions
Cook oatmeal and milk in a small pan until soft (follow directions on packaging). Add the rest of the ingredients and heat through. Taste and re season, Yum!
