Breakfast Parfait Recipe

Craving something creamy for breakfast? If so, it could be the perfect day for a parfait. 

This healthy breakfast option tastes like an indulgent treat but it’s actually loaded with good stuff – yogurt, granola and fresh fruit, yum! 

Ingredients

  • 1 cups rolled oats
  • 1/4 cup shredded coconut
  • 1 Tbsp. brown sugar – (packed)
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. honey
  • 1/4 tsp. cinnamon
  • 1/2 tsp. vanilla extract
  • 1/4 cup raisins or dried cherries
  • 1 cup plain or vanilla yogurt
  • 1/2 cup strawberries
  • 1/2 cup blueberries

 

Directions

To make the granola – in a sauce pan, combine honey, brown sugar, oil, and cinnamon.  Place on medium heat and bring to a boil. Remove from heat and stir in vanilla. Place oats and coconut in a bowl and pour the honey mixture over them. Stir until everything is coated well.

Line a baking pan with tin foil and spray with non-stick spray.  Place oat mixture in pan and spread out evenly across the pan. Bake at 350 degrees for 15-20 minutes. Stir occasionally.

Cool.  Add dried fruit and store in an air tight container.

Parfait Assembly

Place 1/3 inch of granola in bottom of parfait dish.  Place 1 inch of yogurt on top of granola.  Top with a layer of fruit.  Top with 1/3 inch of granola.  Repeat until glass is full.  Sprinkle top with granola and make a decorative arrangement of fruit on top.
