Sautéed Artichokes and Mushrooms with Chicken

This recipe is fantastic for any night of the week.  It’s gourmet enough for mom and dad to love… but yummy enough for the kids to enjoy as well!

It combines some of my (and my kids) favorite things – artichokes, mushrooms and tender chicken pieces…. what more could you ask for?

Sauteed Artichokes & Mushrooms with Chicken


  • 4 Boneless Skinless Chicken Breasts
  • 1 Package Frozen Artichoke Hearts or 1 Can Marinated Artichokes
  • 1/2 package Fresh Sliced Mushrooms
  • 1 Red Bell Pepper Diced
  • 1/2 Cup Dry White Wine (Optional)
  • 1 Garlic Clove Minced
  • ½ Cup Chicken Stock
  • 1/4 Cup Heavy Cream
  • Salt & Pepper
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Butter
  • Fresh Parsley Chopped for garnish



Salt and pepper both sides of the chicken. Brown in the oil and butter in a large skillet for about 5 minutes. Remove from skillet and set aside.

Add garlic, artichoke hearts and mushrooms and sauté in the same skillet until the mushrooms are golden brown.

Return the chicken and add all other ingredients and cover for 5 to 10 more minutes. Garnish with parsley.

Tip – add capers or your favorite fresh herb for more flavor.

Serve over linguini or with an arugula salad!
