Potato Crusted “Beefcake” Cupcakes

The Twice Baked Twins, Judy and Joy, have come up with a fun recipe for a family get together with the kids – a meatloaf cupcake with a mashed potato piped frosting!

This is a fun new way to get your children to eat their dinner…

Ingredients

  • 1 lb ground beef (can use ground turkey breast also)
  • 1/2 cup plain bread crumbs
  • 1/4 cup chopped parsley
  • 2 large eggs, lightly beaten
  • 1/4 cup milk
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • 1 clove fresh garlic, finely chopped

 

Directions

Mix all ingredients together. Line a large muffin pan with cupcake liners and fill each with 1 cup of mixture.

Bake at 350 for 30 minutes.

Mashed Potato Ingredients

  • 2 lbs baking potatoes, peeled and quartered
  • 2 tablespoons butter
  • 1 cup milk
  • Salt and pepper to taste

 

Directions

Boil potatoes in a medium saucepan for about 15 minutes or fork tender. Drain and beat with electric mixer. Add milk and butter, salt and pepper, and frost “Beefcakes” like a cupcake. Sprinkle with parsley for garnish.
