Low-Calorie Faux Butter Recipe
If you’re like us and many of our clients, you’d rather save your calories for chocolate or a decadent treat rather than artery-clogging butter. That’s why this faux, healthy, nutrient-rich “butter” is perfect for slashing calories. At just 34 nutrient-rich calories per serving, you don’t have to put your waistline in jeopardy, even if you go overboard!
We love to eat this on toast instead of butter, as a spread on a sandwich, mixed in with scrambled eggs, over pasta, and so many other ways! Occasionally we’ll even use a fancy oil, such as macadamia nut oil, for a nuttier flavor. Other modifications include adding a squirt of lemon juice or spices such as parsley and oregano. There are endless variations, so don’t be afraid to get creative.
Faux Butter Recipe
Ingredients
- 3 medium summer squash, finely grated
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 tablespoon red onion, minced
- Salt and pepper to taste
Directions
In a frying pan, saute the onions on high heat until translucent. Add the garlic and continue cooking for about 1-2 minutes, or until the garlic is aromatic.
Reduce heat to medium or medium-high. Add the squash. Cook for about 15 minutes, or until a consistency you can spread.
