Let’s Cook: Breakfast Quiche Recipe

Want a delicious recipe for a Sunday brunch, breakfast in bed or any special morning meal?

This quiche is the perfect thing. It’s super easy and super tasty – love!

Breakfast Quiche Recipe

Ingredients

  • One small container of ricotta cheese
  • 3 eggs
  • Dash of heavy cream
  • 1 Leek
  • Spinach
  • Olive oil
  • Onion (optional)
  • Cheese (whatever kind you want)
  • Pie dough (available in the frozen food section of supermarkets)
  • Salt

 

Directions

Put the ricotta cheese into a mixing bowl. Beat your eggs with a little bit of heavy cream (this helps smooth the eggs and keep the consistency creamy) and add into the ricotta.

Use only the white part of your leek – cut it off, quarter and chop it up in to pieces. Add into your mixture.

Saute the spinach in a little bit of olive oil – you can use a little onion for flavor if you want. Mix in the spinach along with the shredded cheese. Stir together until all the ingredients are combined.

Spray a pie tin with non-stick spray. Unroll your frozen pie dough and place inside the tin. Press down and fold over the edges.

Pour the mixture into the crust and smooth it out so it sets in place. Sprinkle a little salt on top, and bake at 400 degrees for about 35 to 45 minutes.

Yum! A delicious breakfast dish!
