Strawberry Shortcake Pizza
‘Za is all the rage right now, so we decided to create a pizza dessert. Since we love strawberries we were inspired to make a sassy Sugar Mommas’ version = Strawberry Shortcake Pizza.
Strawberry Shortcake Pizza
Ingredients
- 1 (5.5 oz.) pre-baked pizza crust
- 8 oz. cream cheese, softened
- 1/3 cup granulated sugar
- 1 cup mini semi-sweet chocolate chips
- 8 oz. strawberries, trilled, hulled, and halved
Directions
Place the cream cheese and sugar in the bowl of a stand mixer fitted with a paddle attachment. Blend on medium speed until combined. Add in the chocolate chips and mix by hand. Use a spatula or spoon to spread the cream cheese mixture onto the pre-baked pizza dough. Add the strawberries in concentric circles. Refrigerate to chill. Slice and enjoy.
Sass it up: Drizzle Momma Reiner’s Raspberry Cardinal Sauce on top for some extra zip. Be careful not too add too much sauce making your pizza soggy. Garnish with mint leaves.
Modern variation: Use whatever fruit is in season. Sprinkle some cinnamon or nutmeg into the filling in lieu of the chocolate chips and add fresh peaches on top. Drizzle with Balsamic glaze.
Momma Reiner’s Raspberry Cardinal Sauce
Ingredients
- 12 ounces raspberries, fresh or thawed frozen
- 1/2 cup granulated sugar (or more as needed)
- 2 tablespoons Grand Marnier, (optional)
- 1 teaspoon fresh lemon juice
Directions
In the bowl of a food processor, combine the fruit, sugar, Grand Marnier, and lemon juice. Pulse until the fruit is pureed and the ingredients are blended. Taste the sauce and add more lemon and/or sugar depending on the natural sweetness of the fruit. This sauce is always a crowd-pleaser.
Modern variation: Use strawberries in lieu of raspberries or go halvsies.
