This Israeli salad is a beautiful, healthy, crunchy snack!
It’s perfect for summer and goes great with grilled chicken or fish for a fresh side.
Ingredients
- cucumbers
- tomatoes (Heirloom tomatoes offer lots of fun colors)
- fresh parsley
- lemon juice
- salt and Pepper
Directions
Chop up the cucumbers, tomatoes, and a handful of fresh parsley. Toss them all together with fresh-squeezed lemon juice, salt, and pepper to taste.
Tip – adding yellow or even purple tomatoes will make this a prettier dish!
